For all the dishes that are prepared "nonny", as the Italians call grandmothers, the owner has only one requirement - that the recipes are authentic.
Joe Scaravella is a restaurant owner. He believes that professional chefs are wonderful, but his “nonnas” are the primary source.
In the first kitchen always cooks Italian, on the second - “nonna” from another country. AT Enoteca maria у Joe is working grandmothers from more than 20 countries.
The "nonna" menus themselves. This time, Alla, who is from Odessa, decided to cook homemade dumplings and cutlets, and for an appetizer - Ukrainian-style placinda.
“Nonna” Alla does not have her grandchildren yet, but this condition is optional in a restaurant. The main thing is to be able to cook, wanted to share experiences and was older than 50 years.
“I have never been so happy because of my age,” Alla admitted.
All the dishes on Alla's menu are family recipes.
“It is very important for me to put garlic in cutlets, just like my mother did. And when my mother fried them, they smelled right up to the neighbors, ”said“ nonna ”from Odessa.
“It's so nice when you are far from your home country and here you can cook a Ukrainian dish. It is very, very nice, ”Alla added.
The price for a portion of Ukrainian dumplings with potatoes, called "ravioli" on the menu, is $ 20. They ask the same amount for cutlets with mashed potatoes and radish salad.
“I'm not interested in fine dining. Most of all, I like the dishes that were invented because of poverty. Because it seems to me that those simple dishes are real. Someone once told me that everything complicated was once simple, ”said the restaurant owner.
Alla in the USA is new, and the adaptation was extremely difficult for her. However, work in Enoteca maria - despite the weak English and foreign origin - made her believe in her own strength.
“I am delighted that it was Joe who came up with such an idea for women of our age, when you want to do something else, and there is a desire, and you still want to live and learn new things. It's as if my wings have grown, "Alla shared.
Less than a year about the restaurant talking around the world. The idea that for a few tens of dollars you can again go back to childhood, where everything seemed better and more delicious, turned out to be universally attractive.
